Some more catching up on recipes!

First up is Pea and Avocado Penne. VERY YUMMY.

Next up: Warm Potato, Onion, and Fennel Salad

Here are the potatoes roasting in our oven.

And the final recipe for today: Italian Rice and Black Bean Stuffed Peppers. 
This recipe can be vegan. And it would have been on mine except that I put real cheese on top instead of fake cheese. One problem I ran into was there was a lot of extra filling for the supposed 4 peppers it was supposed to fill. I think it would have filled 5 peppers. Just a warning. 

Sadly the only pictures I have of this are a picture of a pepper with a lot of little mini peppers growing inside it (I thought it was cool, heh)...

And one leftover pepper, because I was too hungry to take a picture of all of them when they came out of the oven. Whoops. 
It was really hard to take pictures during the cooking of this recipe because it is so GO GO GO all the time. But I was worth it...very good!

I've been slacking...


Sorry sorry! I am so behind on posting now, I will be posting around 2 recipes a day as to not overwhelm the blog. So here is recipe #1: Strawberry Lemon Bars 

 All of the ingredients lined up together before the recipe starts.

2 recipes today!

There are posts on two recipes today because my computer has been on the fritz lately (thank you Dell) and so this is my first opportunity to upload the pictures.

On Wednesday I made Stacked Roasted Vegetable Enchiladas
Here is a picture of all the ingredients lined up together. 

I get so wrapped up in what I'm doing in the Kitchen that I forget to take pictures, so this is is right out of the oven.

Note: this recipe says that it makes only four servings and should be in a 9x9x2 pan. Well...When I made it, it barely fit into a 9x13 pan. And would serve WELL OVER 4 people. So beware. 
The next recipe I made is Cornmeal Crust Pizza with Greens and Ricotta


here is it right before going into the oven. Again, I'm sorry, I'm really bad about taking pictures WHILE doing all the preparation. I'll make sure to do better about that later. 


I made one pizza on a pizza stone, and one on a regular round metal sheet. Here is the pizza stone one in the over first since the pizza stone has the warm up first (I forgot to do that...)

For this recipe I used fake bacon instead of real bacon. That's the only change I made to it. Also, there is half of the dough sitting in our freezer for our next creation! Here is the link to the recipe:

Welcome and Treat #1

Welcome to my new blog. I've decided to create a blog for this summer and my adventures in the kitchen. I hope to try at least a few new recipes each week for dinner and at least 1 dessert recipe per week. When I live by myself I don't get the opportunity to cook as much as I want to. It's a lot harder cooking for one person than it is for 3-4. So now that I'm home for the summer looking for jobs and being and unemployed college graduate living with my parents, I'm going to cook as much as I can!

I have a picture of this week's treat: Cake Batter Rice Krispie Treats.


They are super easy and super yummy! Make a regular version of Rice Krispie Treats and simply add in some box yellow cake mix to the melting marshmallows. I added in 1/3 cup, but I still didn't think it was a strong enough cake flavor, so I will probably add more next time.
